4 boneless, skinless chicken breasts

1 cup crushed pecans

1 cup panko breadcrumbs

2 eggs

1/4 cup Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep the Chicken: Start by patting the chicken breasts dry with paper towels. This will ensure that the coating sticks properly when cooking.

    Make the Coating Mixture: In a large mixing bowl, combine the crushed pecans, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.

      Prepare the Egg Wash: In another bowl, whisk together the eggs and Dijon mustard until smooth. This will act as the adhesive for the nut and breadcrumb mixture.
