1 medium head of cauliflower, chopped into florets

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (panko for extra crunch)

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil for spraying

Prepare the Cauliflower: Place the cauliflower florets in a steamer basket and steam for 6-8 minutes, or until tender. Alternatively, you can boil them in a pot of salted water for about 5 minutes. Drain well and allow to cool slightly.

    Mash the Cauliflower: Once cooled, use a kitchen towel to squeeze out any excess moisture from the cauliflower. In a large bowl, mash the cauliflower with a fork or potato masher until it resembles a coarse mixture.

      Mix Ingredients: To the mashed cauliflower, add the shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, egg, minced garlic, onion powder, smoked paprika, salt, and pepper. Stir well until all ingredients are fully combined.

        Shape Tots: With clean hands, form small oval or cylindrical shapes (about 1-2 inches long) from the mixture. Place them on a baking sheet lined with parchment paper.

          Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

            Air Fry the Tots: Spray the air fryer basket lightly with cooking spray. Place the formed cauliflower tots in a single layer in the basket, making sure they are not overcrowded. You might need to work in batches. Spray the tops lightly with cooking spray.

              Cook: Air fry for 12-15 minutes, flipping halfway through, until the tots are golden brown and crispy on the outside.

                Serve: Remove the cauliflower tots from the air fryer and let them cool for a minute before serving. Enjoy with your favorite dipping sauce!
