Ingredients

1 pound green beans, trimmed

1 cup distilled white vinegar

1 cup water

2 tablespoons kosher salt

1 tablespoon granulated sugar

4 cloves garlic, smashed

2 teaspoons dill seeds

1 teaspoon red pepper flakes (optional for a kick)

1 teaspoon black peppercorns

1 teaspoon mustard seeds

2-3 sprigs fresh dill (optional for added flavor and garnish)

Instructions

Prepare the Green Beans: Rinse the green beans under cold water and trim the ends. Blanch them in boiling water for 2-3 minutes until they turn bright green, then immediately transfer them to an ice water bath to stop the cooking process. Drain and set aside.

Make the Pickling Brine: In a medium saucepan, combine the distilled white vinegar, water, kosher salt, sugar, garlic, dill seeds, red pepper flakes, black peppercorns, and mustard seeds. Bring to a boil over medium-high heat, stirring to dissolve the salt and sugar completely.

Pack the Jars: In clean canning jars, tightly pack the blanched green beans upright. Add fresh dill sprigs if using, and make sure they’re evenly distributed among the jars.

Pour in the Brine: Carefully pour the hot pickling brine over the green beans in the jars, ensuring that the beans are fully submerged while leaving about 1/2 inch of headspace at the top.

Seal and Store: Wipe the rims of the jars with a clean cloth to remove any residue. Seal the jars tightly with lids and let them cool to room temperature. Once cooled, store them in the refrigerator for at least 24 hours before enjoying (they’ll taste better after a few days!).
