1 pound boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust for heat preference)

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Tortillas (for serving)

Optional toppings: sour cream, avocado, shredded cheese

Instructions
 

Prep the Ingredients: Begin by slicing the chicken breasts, onion, and the bell peppers. Mince the garlic and set aside.

    Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the sliced chicken and season with chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

      Add the Vegetables: Push the chicken to one side of the skillet and add the remaining tablespoon of olive oil. On the other side, add the sliced onion and bell peppers. Sauté them for about 5-6 minutes, until they are tender and slightly charred. Stir occasionally to combine flavors.

        Incorporate Garlic and Lime: Add minced garlic to the skillet and cook for an additional 1-2 minutes, just until fragrant. Squeeze fresh lime juice over the mixture and stir everything together to combine.
